Yellow Tomato and Herb Salad

Supplies needed:
1 pound of yellow cherry tomatoes
4-5 roma tomatoes
¼ cup of fresh basil
¼ cup of fresh oregano
1 cup of olive oil
Salt and pepper to taste

You can use any yellow tomato variety that appeals to you. For our sample salad, we used the cherry variety since they are quite flavorful. The choice of course is up to you and your tastes. Your farmer’s market or local grocer should have quite a variety for you to pick from this time of year.

1. Wash your roma tomatoes well and chop them in quarters. Set them aside.

2. Repeat the process with the yellow tomatoes but only cut them in half since they are already small.

3. In a bowl, stir up the herbs (chopped fine) and oil.

4. Pour the mixture over the tomatoes and stir well.

5. Add salt and pepper to taste. You most likely won’t need much since the herbs and oil add quite a bit of flavor to this dish already.

Let your salad refrigerate for an hour or more before serving. This will give the flavors a chance to mingle well and the salad will really taste best. This salad is fantastic served with toasted bread, on garlic bread, or just cold as it is.
